Full disclosure: I am not vegan! Confessions aside, it doesn’t take much to realize that eating meat (specially beef) is not good for the environment. The production of methane (a dangerously powerful greenhouse gas) by cattle is well documented. If, like me, you are not ready to go full vegan, reducing meat consumption is the best next thing! And that’s why I am trying to find some easy and delicious vegan inspirations. This tortilla recipe has become a favorite at ours! I hope you enjoy it too.

There is no replacement for a homemade tortilla and this recipe is an easy one that your whole family will love to help make. Healthy and filling – it makes a great meal, side or snack.

Vegan Tortilla Recipe Ingredients

  • ½ cup flaxseed
  • ½ cup maize flour
  • ¾ cup water
  • ¼ tsp salt

Tortilla Wrap Filling Ingredients

  • ½ cup boiled red kidney beans
  • ½ cup chopped lettuce 
  • ¼ cup chopped onion
  • ¼ cup chopped tomatoes 
  • 1 teaspoon chopped green chillies
  • 1 tablespoon chopped coriander 
  • 1 lemon
  • ¼ cup vegan mayonnaise 

Homemade Vegan Tortilla Instructions

When I first tried this recipe I thought it was going to be really hard – but it wasn’t! I did do some test runs and my first couple of batches were not perfect – but by the 4th try I had it down and even my husband was impressed with how good they were. Take your time, don’t be afraid to modify a bit to your liking and most of all – have fun!

Below are the ingredients you will need including the flaxseed, maize flour, water and salt.

1 | Place the maize flour and flaxseed in a food processor or grinder jar and process until a fine powder forms.

2 | Take it out in a bowl and add the salt.

3 | Bring the water to a boil and add the water into the bowl.

4 | Mix the flour and water together with a spatula, cover it and let it rest for about 15-20 minutes. 

5 | Knead the dough for a few minutes until it is smooth. 

6 | Cut it into small portions.

7 | Take one portion, dust some flour on top and roll the ball into a round about 1/10 inch thick.

8 | Place a pan on heat and roast the tortillas on both the sides for a couple of minutes until you notice brown spots on the surface.

9 | Repeat to make the rest of your tortillas.

Putting The Tortilla Wrap Together

Once your tortillas are done – you are ready to get the rest of your ingredients together to create your tortilla wrap!

While I have added what I placed into my wrap – this you definitely have some room for flexibility! I added items I know my husband and I like – but swap out what you feel you need to to make it your perfect meal.

  1. Place some lettuce, boiled beans, tomatoes, onions, coriander and chillies in each tortilla. 
  2. Top it with some vegan mayonnaise and wrap the tortillas.
  3. Enjoy with a slice of lime.
